Sequatchie Cove Creamery produces artisan farmstead cheese with raw cow’s milk. The milk is produced exclusively at Sequatchie Cove Farm. The cows are on open pasture year-round. The farm’s pastures are certified organic, and the cows get a small amount of supplemental organic grain. All the cheeses are raw, and therefore all are aged a minimum of 60 days before they are sold. Currently available are the tomme, ‘Cumberland’ and the washed-rind cheese, ‘Coppinger.’
